Founder and technical director of Primo Piatto, Danilo Curotto (MisterPasta®) is an Italian internationally recognized pasta technician, instructor and consultant.
Since 1999 he has supported established companies, pasta factories and restaurants, while also assisting new businesses take their first steps in the pasta sector: From the design of spaces to the start-up of the business.

Lidia De Fraia – Coordination and training
Expert in management, training and HACCP specialist
Working alongside Danilo Curotto, Lidia De Fraia plays a key role in building comprehensive training programs and coordinating the educational structure of the courses.
Thanks to her international experience and knowledge of several languages, she provides valuable support to students from around the world.
Her expertise in HACCP, food safety and training management ensures that each course combines practical skills with the highest professional standards.
