Italgi: the professional machinery used in our pasta courses
Machines
Main machines present in the courses
During Primo Piatto professional pasta courses, you’ll work with a selection of Italgi professional machines — Italian equipment designed for real pasta production that allows you to experience every stage of the process in a practical and hands-on way.
Additional equipment can be provided upon request during the courses.
Since Italgi’s headquarters are located in the same building, it is possible to bring additional machinery directly into the training laboratory to further enrich the learning experience.
Why Italgi?
A partnership between training and innovation
With decades of experience in designing Italian professional pasta machinery, Italgi is the ideal partner for Primo Piatto.
This collaboration works in both directions: students learn pasta production techniques using modern equipment with technical support, while Italgi benefits from direct feedback from professionals working in the pasta sector every day.
This synergy allows Primo Piatto training programs to remain closely connected to real production needs and contributes to shaping the future of the pasta industry.
You therefore become active participant in the evolution of the pasta profession.
Why is it important to learn about real professional machines?
Learning to work with real production equipment means understanding the true dynamics of the profession from the very beginning.
In the Primo Piatto training laboratory in Liguria, Italy, each student works directly with professional machines, developing practical skills, confidence and operational knowledge that can immediately be applied in their own business environment: artisan pasta workshop, pasta factory or restaurant.
This hands-on and immersive approach allows you to:
- become familiar with production and maintenance procedures
- understand the technical parameters of pasta processing
- optimize production time and operational costs
It is a practical training experience designed for professionals who want to work in the pasta sector.
